Honey roasted carrots are deliciously tender and sweet. Baked whole and glazed with honey, they make a sensationally easy and elegant side dish for weeknights or holidays.
Ingredients
- 8 medium carrots peeled
- 3 tablespoons olive oil
- ¼ cup honey
- salt and ground black pepper to taste
Instructions
- Gather all ingredients. Preheat the oven to 350 degrees F (175 degrees C).
- Place whole carrots in a baking dish and drizzle with olive oil; toss until carrots are completely covered with oil. Drizzle honey over carrots, then season with salt and pepper; mix until well coated.
- Bake in the preheated oven until carrots are just tender, about 30 minutes, or longer if you prefer softer carrots.
- Serve hot and enjoy!
Notes
Sprinkle some fresh thyme leaves or chopped parsley on the roasted carrots for added color.
I reheat any leftovers in a hot oven for 5 to 10 minutes so the carrots maintain their glaze and texture. You could also reheat them in a pan with a little butter, if you prefer.
