This candied acorn squash recipe makes a delicious side dish with no more than 15 minutes of prep and cooking time. Buttery and sweet, it's a must-try that's almost as good as dessert.
Ingredients
- 1 acorn squash halved and seeded
- ¼ cup butter
- ¼ cup packed brown sugar
Instructions
- Place squash halves, cut-sides up, on a microwave-safe plate or dish. Place 2 tablespoons butter and 2 tablespoons brown sugar in cavity of each half.
- Microwave on full power until squash flesh is soft, 8 to 10 minutes. Rotate squash about twice to ensure even cooking.
- Scoop flesh with sugar and butter into a bowl; slightly mash to blend.
Notes
For a fun presentation, serve in squash shells.
