This cranberry orange loaf recipe is an excellent cranberry orange bread that's full of flavor and sure to put you in the holiday spirit. It tastes even better the next day.
Ingredients
- 2 cups all-purpose flour
- 1 ½ teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 ½ cups fresh cranberries
- ½ cup pecans coarsely chopped
- 1 tablespoon grated orange zest
- 1 cup white sugar
- ¼ cup butter softened
- 1 large egg
- ¾ cup orange juice
Instructions
- Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9×5-inch loaf pan.
- Whisk flour, baking powder, baking soda, and salt together in a large bowl. Stir in cranberries, pecans, and zest. Set aside.
- Beat sugar, butter, and egg together in another large bowl until smooth. Stir in orange juice.
- Beat in flour mixture until just moist. Pour into prepared pan.
- Bake in the preheated oven until bread springs back when lightly touched, about 1 hour. Let stand 10 minutes; turn out onto a wire rack to cool completely.
Notes
To make a delicious sweet glaze for this cake, whisk 1 cup confectioners’ sugar with 2 tablespoons of orange juice until smooth. Drizzle the glaze over the cooled loaf and let it set before slicing.
