Ingredients
  

  • 1 pound smoked sausage such as Conecuh®, cut into 1-inch pieces
  • 1 cup finely chopped onion
  • 2 jalapenos seeded and chopped
  • 4 medium gold potatoes diced
  • 1 28-ounce can seasoned turnip greens
  • 1 14-ounce can Hoppin’ John or seasoned black-eyed peas
  • 1 10-ounce can diced tomatoes and green chiles
  • 1 can navy beans drained
  • 2 cups water
  • 2 teaspoons chicken bouillon paste such as Better Than Bouillon®, or 2 chicken bouillon cubes

Instructions
 

  • Heat oil in a large pot over medium-high heat and add sausage. Cook, stirring often, until sausage is browned and fat has rendered out, about 5 minutes.
  • Add onion and peppers and cook, stirring constantly until onion softens, about 4 minutes. Add potatoes and cook, stirring often, 2 minutes. Add turnip greens, Hoppin’ John, diced tomatoes and green chiles, navy beans, water, and bouillon paste; stir to combine.
  • Bring mixture to a boil, cover, reduce heat and simmer until potatoes are tender, 25 to 30 minutes.

Notes

This could be cooked in a crockpot. Just brown sausage, then add remaining ingredients to a slow cooker and cook on Low for 4 to 6 hours.
