Mississippi chicken casserole is a creamy casserole with shredded chicken, egg noodles, and pepperoncini. It's quick and easy to put together and makes a great weeknight dinner.

Ingredients
  

  • 4 ounces cream cheese softened
  • 1/2 cup sour cream
  • 1 cup shredded Monterey Jack cheese divided
  • 1/4 cup unsalted butter melted
  • 1/4 cup brine from pepperoncini peppers
  • 1 1-ounce package ranch dressing mix
  • 1 1-ounce package au jus gravy mix
  • 1 cup milk
  • 3 cups wide egg noodles 6 ounces, cooked according to package directions
  • 3 cups shredded cooked chicken
  • 1 cup sliced pepperoncini peppers

Instructions
 

  • Gather all ingredients. Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 2-quart baking dish with cooking spray.
  • Stir together cream cheese, sour cream, 1/2 cup Monterey Jack cheese, melted butter, pepperoncini brine, ranch dressing mix, and au jus gravy mix in a large bowl until well combined. Stir in milk.
  • Fold in cooked noodles, chicken, and pepperoncini peppers until evenly coated.
  • Spread mixture into the prepared baking dish; sprinkle with remaining 1/2 cup Monterey Jack cheese.
  • Bake until hot and bubbly, 25 to 30 minutes
