This easy chicken orzo bake is a tasty way to use up leftover chicken. Plus, a wheel of Boursin cheese makes a creamy sauce without any cream.
Ingredients
- 3 cups shredded cooked chicken breast
- 1-1/2 cups uncooked orzo pasta
- 3 cups unsalted chicken stock
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 5.3 ounces Boursin garlic and fine herbs cheese
- 10 ounces grape tomatoes
- 3 cups fresh baby spinach
- 1/2 cup finely grated Parmesan cheese
Instructions
- Preheat the oven to 425°. Grease a 13×9-in. baking dish.
- Add chicken, orzo, chicken stock, garlic powder, dried oregano, salt and pepper to the baking dish; stir to combine. Place the Boursin cheese in the center of the baking dish. Sprinkle the tomatoes on top. Cover; bake for 30 minutes.
- Uncover; stir in the spinach. Bake an additional 10 minutes or until the orzo is tender. Sprinkle with Parmesan cheese to serve.
