- 1 tablespoon olive oil
- 2 pounds boneless skinless chicken breasts sliced in half lengthwise
- Salt and pepper to taste
- 1 cup reduced-sodium chicken broth
- 1/2 cup dry white wine
- 1/2 cup freshly squeezed lemon juice
- 6 garlic cloves smashed
- 3 tablespoons capers drained
- 2 tablespoons cornstarch
- 2 tablespoons unsalted butter
- Minced fresh parsley for garnish
Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper. Place chicken in the skillet; cook until browned, 2-3 minutes per side.
In a slow cooker, stir together broth, white wine, lemon juice, garlic and capers. Add chicken. Cook on low 3-4 hours or until an instant-read thermometer inserted into the center of the chicken breast reads 165°.
Transfer chicken to a plate; cover.
Increase slow cooker temperature to high. Remove 1/2 cup broth to a glass measuring cup or bowl; stir in cornstarch until dissolved. Add mixture to the slow cooker; stir. Cover; cook 10-15 minutes or until the sauce is slightly thickened. Stir in butter until melted.
Transfer chicken to plates; pour sauce on top. Garnish with parsley to serve.
