- 1 cup pitted Medjool dates
- ¾ cup old-fashioned rolled oats
- ½ cup raw cashews
- ¼ cup graham cracker crumbs from 1 sheet
- ¼ cup sweetened condensed milk
- 2 tablespoons hemp seeds
- 2 teaspoons grated Key lime zest divided
- 2 tablespoons Key lime juice
- 1½ teaspoons vanilla extract
- ¼ teaspoon salt
- ½ cup unsweetened shredded coconut
Combine 1 cup dates, ¾ cup oats, ½ cup cashews, ¼ cup graham cracker crumbs, ¼ cup condensed milk, 2 tablespoons hemp seeds, 1 teaspoon Key lime zest, 2 tablespoons Key lime juice, 1½ teaspoons vanilla and ¼ teaspoon salt in a food processor. Process until fully combined and a thick paste forms, about 1 minute, stopping to scrape down sides as needed.
Line a large rimmed baking sheet with parchment paper. Using a 1-tablespoon cookie scoop or measuring spoon, scoop the mixture into 20 equal portions (1 level tablespoon each) and place on the prepared baking sheet. With clean hands, shape each portion into a ball. Roll and gently press the balls in ½ cup coconut until evenly coated. Top with the remaining 1 teaspoon Key lime zest.
