A tasty and tangy green salsa that may be used for cooking or on top of Mexican-style foods. Adjust the amount of jalapeño to taste.

- 8 tomatillos husked
- 3 shallots
- 1 4 ounce can chopped green chile peppers
- ¼ cup chopped fresh cilantro
- 1 fresh jalapeño pepper seeded
- 2 cloves garlic peeled
- salt to taste
Place tomatillos, shallots, green chile peppers, cilantro, jalapeño, garlic, and salt in a food processor. Pulse until coarsely chopped. Pour salsa into a serving bowl; cover and chill in the refrigerator until serving.
