Ham and White Bean Soup
This ham, bean, and cabbage soup is one of my family's favorite soups. It's great on chilly days. For bean lovers, add a second can of white beans.
Ingredients
- 1 tablespoon olive oil
- 1 onion diced
- 1 ½ teaspoons Italian seasoning
- 1 quart chicken broth
- 15.5 ounce can white beans drained
- 14.5 ounce can petite diced tomatoes
- ½ head cabbage shredded
- ¾ pound ham diced
- 2 stalks celery chopped
Instructions
- Heat olive oil in a soup pot over medium-high heat. Cook and stir onion in hot oil until tender, about 5 minutes. Season with Italian seasoning; cook and stir for 1 more minute.
- Stir in chicken broth, white beans, tomatoes, cabbage, ham, and celery; bring to a boil. Reduce the heat to low and simmer until celery and cabbage are tender, 15 to 20 minutes.
