This aromatic slow-cooker curried beef stew is a hands-off approach to a comfort food classic. Beef, onions and two different spice blends create an Indian-inspired feast.
Ingredients
- 2-1/2 to 3 pounds beef stew meat
- 3 tablespoons butter
- 2 large onions chopped
- 2 tablespoons curry powder
- 1 tablespoon garam masala
- 1/4 cup lemon juice
- 1/4 cup packed fresh parsley sprigs choppped
- 2 tablespoons chopped fresh mint leaves
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 2 cups water
- 1 teaspoon beef bouillon granules
- Hot cooked rice
Instructions
- In an ovenproof Dutch oven, heat butter over medium heat. Brown beef in batches. Remove with a slotted spoon to a 6-qt. slow cooker.
- In same pan, add onion; cook and stir until tender, 4-5 minutes. Add curry powder, Garam Masala, lemon juice, parsley, mint, salt and pepper; stir until fragrant, about 1 minute longer. Add to slow cooker along with water and beef bouillon, stir to combine. Cook on high until beef is tender, about 4 hours.
- Serve over hot cooked rice; garnish with additional fresh mint as desired.
