Ingredients
  

  • 2-1/2 to 3 pounds beef stew meat
  • 3 tablespoons butter
  • 2 large onions chopped
  • 2 tablespoons curry powder
  • 1 tablespoon garam masala
  • 1/4 cup lemon juice
  • 1/4 cup packed fresh parsley sprigs choppped
  • 2 tablespoons chopped fresh mint leaves
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cups water
  • 1 teaspoon beef bouillon granules
  • Hot cooked rice

Instructions
 

  • In an ovenproof Dutch oven, heat butter over medium heat. Brown beef in batches. Remove with a slotted spoon to a 6-qt. slow cooker.
  • In same pan, add onion; cook and stir until tender, 4-5 minutes. Add curry powder, Garam Masala, lemon juice, parsley, mint, salt and pepper; stir until fragrant, about 1 minute longer. Add to slow cooker along with water and beef bouillon, stir to combine. Cook on high until beef is tender, about 4 hours.
  • Serve over hot cooked rice; garnish with additional fresh mint as desired.
