Potato and Sausage Soup
This soup with potatoes and sausage is a variation of an original German soup. My family loves this soup, and I never have leftovers. This recipe is one my grandmother used to make when I was growing up, and I have always loved it.
Ingredients
- 1 pound bulk mild Italian sausage
- 1 pound kielbasa smoked sausage cut lengthwise and sliced into 1/2-inch pieces
- 4 cups diced potatoes or more to taste
- 4 cups water
- 2 cups chicken broth
- 1 cup heavy whipping cream
- 1 stalk celery diced, or more to taste
- 2 cubes chicken bouillon
- 1 tablespoon minced garlic
- 1 teaspoon salt
- ½ teaspoon ground black pepper
- ½ teaspoon garlic powder
- ⅓ teaspoon crushed red pepper or more to taste
Instructions
- Heat a large pot over medium-high heat. Cook and stir Italian and kielbasa sausages in the hot pot until browned, 5 to 7 minutes. Drain grease.
- Stir potatoes, water, chicken broth, heavy cream, celery, bouillon, garlic, salt, pepper, garlic powder, and red pepper into the pot. Reduce heat and let simmer until potatoes are tender, about 1 hour 30 minutes.

Recipe Tips
If you like spicy, you can use spicy Italian sausage, more crushed red pepper, or add onions.
You can add a little kale instead of celery.
The chicken broth sounds like it would clash, but once you make the recipe, you will see how outstanding it tastes.
Add and replace various items according to what you and your family like.
Cooking time can vary depending on how slow you cook this and when the potatoes are done. You can cut the potatoes into bigger pieces if you want to cook them longer and some into smaller pieces to help thicken the soup.
